The Protein Brewery (TPB) (, is an innovative developer of plant based, highly nutritious food ingredients, driving the transition to alternative food sources across the globe. The company was founded in January 2020 as a demerger of BioscienZ BV. Their specialized fermentation process, led by unique fungal species, seamlessly converts sugars into protein. TPB’s hero product Fermotein® enhances the nutritional value of various food products without compromising flavor or texture, making it a versatile choice for baked goods, snacks, meat analogues, dairy alternatives, and pastas. Located in Breda, TPB is a dynamic, enthusiastic, and fast-growing scale-up, consisting of a team of 35 purpose-driven professionals with a strong ‘can-do’ mentality. The next step in TPB’s growth is the development of marketable product applications. This is done by the application team in consultation with Sales and the R&D department. While R&D focuses on the internal development of the product and processes, the application team focuses on product development towards the market. In the role of Sr. Application Technologist, there is a nice balance between strategic planning and actually developing applications in various product segments. The primary focus is currently on bakery and snack products for the American market.


  • Responsible for developing and optimizing the application of Fermotein® in collaboration with the R&D department, ensuring it’s future-proof
  • Able to combine deep ingredient knowledge with strong vision and leadership to bring 2nd generation product applications to customers
  • Mapping and understanding customer needs and trends in the food industry and translating them into end applications in close collaboration with Sales
  • Contributing to the commercial strategy by recognizing and responding to new technological innovations and other business opportunities
  • Providing support to sales with essential product and technical business knowledge to be able to prioritize projects in the innovation pipeline
  • Implementing technological projects at customers and troubleshooting in product technology
  • Developing innovative product concepts in collaboration with R&D, Sales, Production, and any external consultants and Universities
  • Reporting to the Commercial Director.


  • Bachelor’s or master’s degree in for example in Food Technology or Product Development
  • Several years of work experience as an Application Technologist or in Technical Sales with relevant knowledge of ingredient functionality and product applications
  • Capable of combining product knowledge and project leadership to challenge status-quo
  • Living in and eligible to work in the Netherlands
  • Excellent communication skills in English and preferable Dutch
  • Willingness to travel internationally for product demonstrations and implementations (approximately 15%)
